Icebox pie is refreshing and ideal for an outdoor event or garden party. What’s more, it’s a great way to make use of those sweet summer strawberries.
Ingredients: Strawberry Ice Box Pie Recipe
Crust:
- 1½ cups pretzels (finely crushed)
- ¼ cup brown sugar
- ½ cup butter
Filling:
- 1 cup heavy whipping cream
- 7 ounces sweetened condensed milk
- 4 ounces cream cheese (room temperature)
- 1 (3 ounce) package strawberry gelatin
- 2 cups strawberries (hulled, mashed)
Topping:
- ½ cup confectioner’s sugar
- 1 cup heavy whipping cream
- 12 fresh strawberries (hulled, halved)
Directions: Strawberry Ice Box Pie Recipe
- Preheat the main oven to 350 degrees F.
- In a bowl, combine the crushed pretzels with the brown sugar and butter and press the mixture into the bottom and up the sides of a lightly greased 9-10” pie plate.
- Bake in the preheated oven for 12 minutes, before setting aside to completely cool.
- In a second bowl, beat the cream until soft peaks begin to form.
- In a third bowl, beat the condensed milk along with the cream cheese and strawberry gelatin, until silky smooth.
- Add the mashed strawberries and fold the combined mixture into the whipped cream.
- Spread the filling evenly over the crust and transfer to the freezer, overnight.
- When you are ready to serve, whip the confectioner’s sugar with the whipping cream until soft peaks begin to form.
- Serve the topping on top of the pie and garnish with fresh strawberries.
- Serve and enjoy.
