Icebox pie is refreshing and ideal for an outdoor event or garden party.  What’s more, it’s a great way to make use of those sweet summer strawberries.

Strawberry Ice Box Pie Recipe

Ingredients: Strawberry Ice Box Pie Recipe

Crust:

  • 1½ cups pretzels (finely crushed)
  • ¼ cup brown sugar
  • ½ cup butter

Filling:

  • 1 cup heavy whipping cream
  • 7 ounces sweetened condensed milk
  • 4 ounces cream cheese (room temperature)
  • 1 (3 ounce) package strawberry gelatin
  • 2 cups strawberries (hulled, mashed)

Topping:

  • ½ cup confectioner’s sugar
  • 1 cup heavy whipping cream
  • 12 fresh strawberries (hulled, halved)

Directions: Strawberry Ice Box Pie Recipe 

  1. Preheat the main oven to 350 degrees F.
  2. In a bowl, combine the crushed pretzels with the brown sugar and butter and press the mixture into the bottom and up the sides of a lightly greased 9-10” pie plate.
  3. Bake in the preheated oven for 12 minutes, before setting aside to completely cool.
  4. In a second bowl, beat the cream until soft peaks begin to form.
  5. In a third bowl, beat the condensed milk along with the cream cheese and strawberry gelatin, until silky smooth.
  6. Add the mashed strawberries and fold the combined mixture into the whipped cream.
  7. Spread the filling evenly over the crust and transfer to the freezer, overnight.
  8. When you are ready to serve, whip the confectioner’s sugar with the whipping cream until soft peaks begin to form.
  9. Serve the topping on top of the pie and garnish with fresh strawberries.
  10. Serve and enjoy.
